Indian-Style Lentil Soup

Ingredients

1 medium (150g) onion2 cloves garlic4cm piece of ginger, peeled2 tablespoons coriander leaves1 tablespoon peanut oil1/4 cup (60ml) mild curry paste2 medium (400g) potatoes, roughly chopped1 medium (120g) carrot, chopped1.5 litres (6 cups) chicken stock1 cup (200g) red lentils1/2 cup (55g) coconut milk powder mix3/4 (180ml) water1 tablespoon lime juice
1. Chop onion, garlic and coriander (mix)
2. Heat oil in large pan; cook onion mixture until onion is soft. Add paste, cook, stirring until fragrant. Add potatoes, stock and lentils. Simmer, covered, for about 15 mins or until lentils are soft.
3. Blend soup mixture with hand held barmix (or something of the like)
4. Whisk coconut powder and water until smooth. Add coconut milk and lime juice to soup; stir over a low heat until heated through. Garnish soup with coriander; serve with naan bread.
