Low Fat Hot Milk Sponge Cake

1 cup all-purpose flour1 teaspoon baking powder2 large eggs1 cup sugar1/2 cup non-fat milk2 tablespoons unsalted butter
1. Grease a 9x9x2-inch baking pan; set pan aside. Stir together flour and baking powder; set aside.
2. In a mixing bowl beat eggs with an electric mixer on high speed about 4 minutes or till thick. Gradually add sugar, beating on medium speed for 4 to 5 minutes or till light and fluffy. Add the dry mixture; beat on low to medium just till combined.
3. In a small saucepan heat and stir milk and butter till butter melts; add to batter, beating till combined. Pour batter into the prepared pan.
4. Bake in a 350-degree oven for 20 to 25 minutes or till a wooden toothpick comes out clean. Cool cake in pan on wire rack for 30 minutes.
Makes 9 servings. (Cut 3x3 in pan)

wow! its so thin? After I cooked it all was well. I think I needed to cook it longer however, as it sank down a bit. I used it for my daughter's birthday cake with strawberry essence and pink food colouring. It was baked in a molded tin and retained the features very well. I'll use again.
