Pasta with Fresh Tomato Sauce

2 tsp. extra virgin olive oil1 clove garlic, chopped1/2 cup celery, chopped1 Tbsp. shallots, chopped1 cup Roma tomatoes, chopped1/2 cup low-sodium chicken brothSalt & pepper to taste2 cups fresh spinach2 oz. whole wheat spaghetti, cooked2 Tbsp. basil, chopped1/4 cup grated Parmesan cheese
1. Heat oil in a large skillet. Add the garlic, celery and shallots; cook for 2-3 min. Add the tomatoes and chicken broth and cook for an additional 10 min.; season with salt and pepper to taste.
2. Add fresh spinach one handful at a time and cook until wilted. Add the cooked pasta and toss to combine.
3. Serve topped with basil and Parmesan cheese.
