Low-cal, Low-fat, amazingly delicious banana chocolate chip muffins

* Egg substitute, liquid (Egg Beaters), 0.25 cup * Salt, 0.25 tsp * Applesauce, unsweetened, 0.25 cup * Banana, fresh, 1 cup, mashed, soaked in about 1/8 cup of coffee * Baking Powder, 0.5 tsp * Baking Soda, 0.5 tsp * Flour, white, 0.25 cup * Whole Wheat Flour, 1.25 cup * Hershey's Special Dark Chocolate Chips, 3 tbsp * Vanilla Extract, 0.5 tsp * Almond Extract 0.5 tsp * 3/4 cup sugar substitute * 1/4 cup Organic unsweetened low-fat vanilla almond milk * Agave Nectar, 0.5 tbsp
Preheat oven to 350
Cream together sugar substitute, agave sweetener, applesauce, milk and egg beater. Mix in bananas, after soaking them in coffee (soaking them in dark rum is also tasty).
In separate bowl sift together flour, salt, baking soda and baking powder. Mix together dry with wet. Add vanilla and almond extracts, and chocolate chips.
Spray muffin tin with (no cal no fat) cooking spray, pour mixture in tray.
Bake for about 40 min or until tooth pick inserted into the center of a muffin comes out dry. (Muffins do take a shorter amount of time to bake than an entire loaf, so just be aware)

What is Agave Nectar and where do I find it. This looks like a recipe I want to try. - 2/13/10

Agave nectar is a honey-like sweetener (but less viscous than honey, and a little sweeter). You can definitely find it at Trader Joe's or Whole Foods... not sure where else though. Good luck!
