Chicken Cordon Blue

Ingredients
4 boneless, skinless chicken breasts4 slices of ham4 slices of swiss cheese4 slices of bacon3 oz of cream cheese2 tbsp butter2 cups sliced fresh mushrooms (optional)
Directions
With the smooth side of a meat mallet, gently pound each chicken breast until approximatley 1/4 of an inch think. Stack a slice of ham and cheese on each chicken breast. One one end place 1/4 of block of cream cheese. Roll up and secure with a slice of bacon and a toothpick. Arrange in a small baking dish and bake at 375 degrees for 45 minutes or until down (fork should release from meat). Saute mushrooms in butter. Pour cheese sauce that formed in baking dish over chicken breasts and top with saute mushrooms if desired.

Makes four servings.
