Salmon Chowder

Ingredients
1 tbsp olive oil1 cup diced yellow onion1/2 cup diced celery2 cups chopped potatoes1 cup chopped carrots2 cups vegetable broth1 cup whole milk1 1/2 lbs salmon fillets1/4 cup chopped fresh parsleySalt and Pepper to taste1 tbsp of fresh chopped chives for garnish
Directions
Sauté onion and celery in the olive oil in the same pot until onion is translucent. Add potatoes and sauté about 5 minutes, stirring occasionally. Do not brown. Add carrots and stock, bring to a boil, then reduce heat and simmer until vegetables are fork tender about 10 minutes.

Add milk, salmon, parsley, and pepper. Simmer over low heat 5 to 8 minutes or until fish is cooked through and liquid is steaming, but not boiling. Add more pepper and salt to taste. Transfer to serving bowls and garnish with chives.

    I made this recipe last night. It is delicious and easy to make. I did modify it just a touch, using a quart of chicken broth, 1/2 cup parsley, a 16oz. bag of baby carrots chopped, and some heavy cream added at the end, instead of the milk. I will definitely be making this hearty chowder again! Than - 11/3/20
