Amanda's Easy Low-Yolk Egg Salad

Ingredients
4 hard-boiled eggs, remove all but one yolk
1 tbsp dijon mustard
1.5 tbsp light mayonnaise
1 tsp yellow mustard
1/2 tsp dill pickle juice (optional, but try it!)
salt, pepper, and a little paprika to taste
Directions
Hard-boil four large eggs. When they are done and cooled (don't burn yourself!), peel them, and chop them up. Get rid of three of the egg yolks (unless you want them, but you will need to re-calculate the stats). Chop up the eggs, and mix up with the other ingredients.



Makes about three sandwiches- great on whole wheat bread or even by itself! Enjoy!
