Trail Mix cookies

Ingredients
1/2 c applesauce (unsweetened)1/4 c. Smart Balance1/2 c. brown sugar1/2 c. Splenda1 large egg1/3 c. shredded coconut3/4 c. plus 1 tbsp. flour (can use whole wheat or white or blend)pinch saltpinch baking sodapinch cinnamon1/4 tsp. vanilla extract2 c. oats1/3 c. unsalted peanuts or cashews1/3 c. m & m's or chocolate chips
Directions
Blend applesauce, Smart Balance, and sugars. Add egg and vanilla and combine. Add coconut, flour, salt, baking soda, and cinnamon. Mix until blended. Fold in oats, then mix in nuts and chocolate (if desired).

Drop by teaspoonful onto parchment lined cookie sheets.

Bake in 360 degree oven-10 to 12 minutes, they do not spread. Cool on rack.
