Sweet potato & Cauliflower Curry

Ingredients
Olive Oil, 0.25 cup Onions, raw, 1 medium (2-1/2" dia)Garlic, 1 clove Ginger Root, 1 tsp Curry powder, 1 tbsp *Cumin powder, 2 tsp Canned Tomatoes, 1 can Vegetable Broth, 1 cup Cauliflower, raw, 500 grams *Potato, raw, 2 large Sweet potato, raw, peeled, 400 gram(s)Peas, frozen, 0.5 cup Yogurt, plain, low fat, 0.5 cup
Directions
1. Heat oil in pan & saute onion, garlic & ginger over medium heat for 2 mins.
2. Stir in curry & cumin powder & cook for 1 min
3. Add tomatoes & stock & bring to boil
4. Add vegetables, reduce heat & simmer until tender
5. Stir in peas & cook for a further 5 mins
6. Spoon into bowls & top with yogurt & sprinkle with coriander
