Ingredients
1 - whole cucumber1/2 cup - red onion, chopped3 tablespoons - fresh dill weed, chopped1 tablespoon - fresh mint, chopped1-1/4 cups - nonfat plain yogurt1/4 teaspoon - salt1/8 teaspoon - black pepper1/16 teaspoon - cayenne1/4 tablespoon - celery seed
Directions
Combine all ingredients and puree with blender. Chill. Garnish with chopped dill or parsley.

Yields 1 quart

    Way too much going on with this recipe. The coolness of the cucumber and the yogurt mixing with a minty dill/onion-tasting subtle heat, results in a confused set of tastebuds. My wife and I both decided however, if a little sour creme or fat-free mayo was added it would be a great salad dressing. - 7/24/10
