Spanish Quinoa

Ingredients
1 cup Quinoa2 cups waterExtra Virgin Olive Oil, 2 tbsp1 medium onion (chopped)3 cloves of garlic1 can of diced tomatoesChili Powder, 1 tspCumin, ground, 1 tspOrganic Frozen Peas, 1 cupOrganic Frozen Corn, 1/2 cupTumeric, 2 tspOregano, ground, 3 tbsp Salt, 2 tspLemon Juice, 1 wedge yields
Directions
Makes 4 servings

Sauté the onion over medium heat in a stock pot until onion starts to become translucent
Add the garlic to the onion and sauté a few more minutes until the onion is translucent and garlic is turning golden
Add optional pinch of cayenne or chili powder, tumeric, and oregano
Add quinoa and stir constantly for 3 - 4 minutes
Add tomato sauce and water stirring occasionally until mixture begins to boil
Add salt if needed - water and tomato sauce may already be salted
Cover and reduce heat to simmer for 20 minutes
Add in frozen peas and corn
Turn heat off and let sit for 5 - 10 minutes
Fluff with a fork and serve garnished with onion and lemon wedges
