Gnarly Pancakes

Ingredients
3/4 cup whole wheat flour1/4 cup chopped walnuts1/4 cup rolled oats1 egg1 cup skim milk1 tbsp Canola oil2 tsp (packets) Splenda1 1/2 tsp baking soda1/2 tsp salt (optional)cinnamon (to taste)
Directions
Wipe griddle with oil and preheat while preparing batter. Mix wet ingredients, then mix in walnuts, oats, Splenda, and cinnamon. Add flour as required to make thick batter, then add baking powder and mix well.

Grill is ready when water dances. Pour 5" pancakes, spreading with back of spoon if batter is too thick. Turn when bubble holes remain open and edges lose sheen. Makes 3 servings of 4 X 5" pancakes. Use low-fat margarine and sugar-free syrup to keep calories down.
