Ingredients
2 bunches greens (I used collard and mustard for this, about 12 cups when trimmed and chopped.)4 full slices bacon1 tbsp apple cider vinegar2 tsp brown sugar4 cups chicken broth (I used 1 pckg Pacific Natural low sodium chicken broth)
Directions
Trim away the main stem and clean the greens well by giving thorough rinsings. 2-3 times as needed to get all the grit off then set aside to drain. Collards tend to be pretty clean anyway but mustard greens usually have lots of dirt still.

Cook the bacon til crispy.

Chiffonade the greens and add to your slow cooker. Crumble the cooked bacon and pour it with the rendered fat over the greens. Add about 1 tbsp vinegar, sprinkle the brown sugar and then pour in the chicken broth.

Cover and set to low for about 6 hours. Makes 6 1-cup servings

This is delicious. We get collard greens through our organic co-op and are never sure what to do with them. This is great. Thanks for sharing! - 1/14/10
