BBQ Rice Salad

Ingredients
Salad Ingredients:2 tomatoes1 apple10cm of cucumber30g sultanas30g chopped walnutsHalf a red onion100g brown riceFor the dressing:2tbsp extra virgin olive oil4tbsp cider vinegar1tsp salt2 cloves crushed garlic
Directions
Cook rice according to pack instructions.

Chop all other salad ingredients into cm cubes.

Mix dressing ingredients and shake together in a clean jar.

When rice is cooked, mix into salad ingredients and pour over dressing.

Stir all ingredients together in dressing.

Can be eaten right away or left to cool.

Serves 4 as a side dish or 2 as a main course for a packed lunch. (Calories calculates for 4 servings per recipe)
