Mini meatloaves

Ingredients
1 lb lean ground beef1/4 cup breadcrumbs1 large egg2 tbsp barbecue sauce1 tsp garlic powder1/2 cup chopped (or diced) onion
Directions
For this recipe you will use a 12 muffin pan rather than a loaf pan. (if you wish you can spray the compartments to keep the food from sticking).

Pre-heat your oven to 375*F.

Add all of the ingredients to a large mixing bowl.

Using your hands kneed all of the ingredients together until it is very well blended.

Divide the meat evenly into 8 of the muffin compartments. (if you wish you can add a dash of bbq sauce to the tops of each)

Place in the oven and cook for 30-35 minutes or until cooked through.

Makes 8 individual mini meatloaves.

    I have a recipe very similar to this one that I've used for years. Instead of bread crumbs I use oatmeal and instead of bbq sauce I use tomato sauce w/ shredded cheddar on top of each 'muffin'. - 1/10/10

    This will be perfect to make in the new square muffin pan I just purchased. I plan to make the whole recipe, then freeze the individual portions for separate meals. - 1/8/10
