4 boneless skinless chicken breast portions (2 split breasts), 4 cups (two cans) of diced tomatoes, 4 cups of Great Northern beans (2 cans)1 tsp. fines herbes or herbes de Provence2 cups chopped onion2 cups chopped green pepper
First thing in the morning, layer one cup of onions, one cup of bell peppers, one cup of tomatoes, and 2 crushed cloves of garlic in the bottom of your crock pot. On top of this, layer in four thawed skinless chicken breast portions (2 split breasts or four individual pieces, can be with or without bones) and 1/2 tsp of the herbs. Stir together the beans with the remaining onions, garlic and peppers; top with remaining tomatoes and herbs. Cook for 10 hours on low (6 on high, but it is better cooked more slowly). Optional: add 4 oz. red wine, additional cooking liquid is not required but it gives a nice flavor.
