Healthy Energy Bars

1 1/2 cups regular oats1 cup unsalted, dry-roasted peanuts12 cups air-popped popcorncooking spray1/2 cup unsalted butter1 cup light brown sugar5 T clover honey1/2 t kosher salt1/4 t vanilla extract1 1/2 c raisins
1. Preheat oven to 350
2. Place oats and peanuts on a baking sheet; bake for 12 minutes. Remove the sheet from the oven and cool completely. Place popped corn in a very large bowl that has been sprayed with cooking spray. Set aside a 15x10x1 inch jellyroll pan or 13x9 inch baking pan.
3. In a medium saucepan, combine butter, sugar, and honey. Place the saucepan over medium heat and stir until mixture comes to a boil. Then boil for 1 1/2 minutes. Remove from heat and stir in salt and vanilla.
Pour hot syrup over popped corn and stir until corn is well coated. Stir in reserved oats and peanuts, plus raisins.Spread evenly in prepared pan. Allow to cool completely, abut 30 Minutes.
5. Turn out the cooled mixture into a large cutting board, cut into 24 equal bars. Store in an airtight container. Serving size 1 bar.
