Lemon and Herb Shrimp Pasta

1 lb linguine 2 T Extra Virgin Olive oil1 small onion - diced2 cloves garlic - diced1 lb Jumbo Shrimp - raw, peeled, and deveined.25 C dry white wine2 - 3 T fresh parsley2 T fresh basil2 - 3 t fresh thymeJuice and zest of one lemonup to 1 C pasta watersalt and pepper to taste
Peel and devein shrimp. Rinse and pat dry. Set aside.
Boil linguine in salted water, about 8-9 minutes.
Meanwhile, Saute onion in oil. Med-low heat for 3 minutes.
Add minced garlic and sautee for 2 minutes.
Add shrimp and saute until near done (about 4 minutes)
Add wine, lemon juice and zest.
Add herbs, salt and pepper.
Add pasta water to thicken sauce (up to one cup)
Toss in linguine until fully coated with sauce.
Serve with grated parmesean cheese and lemon wedges (not included in Nutritional Information)
