Green Chili Chicken Enchiladas

Ingredients
1 full chicken breast, without skin or bones - poached2 cans Hatch green enchilada sauce1 can chopped green chilies1 small onion chopped12 tortillas1/2 cup Weight Watchers Mexican blend cheese
Directions
Cut the poached chicken into small pieces. Pour 1 can enchilada sauce into a skillet. Heat sauce on medium low temperature. Soften the tortillas one at a time in the enchilada sauce. Place chopped chicken, onion, and diced green chilies in each tortilla and roll into enchiladas. Place the enchiladas into a baking dish. Cover the enchiladas with remaining enchilada sauce and cheese. Bake at 350 for 20 to 30 minutes until hot and melted. Makes 12 servings.
