Kale with bacon and sardines

Ingredients
1 bunch kale or other green3 slices bacon3 cloves garlicblack pepper1/2 cup water1/2 tsp. chicken bouillon powder2 3oz. cans smoked sardines in oil, drained
Directions
Over low heat, saute the bacon. Meanwhile, de-stem the kale and rough chop. Raise the heat on the bacon slightly, when it starts to brown a little, add the garlic. Saute for about a minute, then add the kale and pepper and toss until it is all starting to wilt. Saute for about 4 minutes, then add the water and bouillon (adjust quantity to your liking--there's no salt added on its own in this recipe). Raise the heat and simmer until kale is just cooked and most of the water is evaporated. You don't want the pan to dry out though or the garlic will burn. Add water as necessary, its okay if there's a little leftover in the pan. Place 1/2 of the mixture on a plate, leaving any excess liquid in the pan. Top with the sardines. You may prefer to heat the sardines up a little bit so the temperature matches the kale, but they taste fine just as they are. Serve as a side dish, or to top pasta for a complete meal.
