ED'S Lemmon Chicken

2 Skinless boneless chicken breasts pounded to 1/4 inch1/2 cup seasoned bread cumbs1/2 cup eggbeaters1/4 cup Parmeasan Cheese1/2 tbsp olive oil1/2 tbsp butter, unsaltedjuice of 1 lemon4 oz white wine
Serves 2, 1 chicken breast each
Dredge chicken breasts in flour, and then in eggbeaters, then in cheese breadcrumb mixture to coat. Heat 3/4 tsp butter with 1/2 tbsp olive oil until hot, cook chicken breast over medium high heat for 2 minutes on each side until brown and thoroughly cooked. Remove chicken from pan and keep warm. Deglaze pan with wine lemon juice and remaining 3/4 tsp butter. Pour sauce over chicken and serve.
