Banana bran muffins

Ingredients
1/2 c brown sugar1 egg1 1/2 c mashed bananas1/4 c applesauce2 TBSP vegetable oil1 tsp vanilla1 1/2 c whole wheat flour1/2 c wheat bran (not cereal)1 tsp cinnamon1/4 tsp salt2 tsp baking powder1/2 tsp baking soda
Directions
Preheat oven to 375. Combine sugar, oil and egg together until smooth. Add in banana, applesauce and vanilla and stir.
In a seperate bowl, combine all dry ingredients. Mix well and gently stir into the wet ingredients until moistened. Do not overmix. Spoon into muffin cups or greased muffin pan. Bake for 20 min. Makes 12 regular sized muffins.
