Fresh Corn and Bacon Soup

Ingredients

2 cups fresh corn off of the cob1 cup fat free half and half1/2 cup 1% milk2 tbsp whipped butter1/2 cup dry mashed potato flakes3 slices of bacon, cooked crisp, patted dry, chopped1 cup chopped onion
Melt butter in pan on stove.
Add corn, onion and cook until tender.
Remove from heat and add to a medium pot.
Add all other ingredients.
Cook on low until heated and a bit think.
If it is still thin, you may add more potato flakes.
Use salt and peper if you like.
Very filling.

I added a dash of italian seasonings, a tablespoon of cayaen pepper, pepper, a tablespoon of co-jack cheese on the top and made an extra slice of bacon and sprinlked over the tope....also didn't use 1/2 and 1/2 but 1 1/2 cups of 1% milk instead....very good base recipe!! Thanks - 2/18/10

Really good! I used frozen corn but still cooked with onion. I also added just a dash of cayenne pepper so it has just a little kick. It seemed a little bland to me. And I did use 2% milk and found that 1/2 c potato flakes was too thick so I ended up using about 2 1/2 cups of milk total. - 6/3/11
