Veal Stew

Ingredients
500g veal, stewing2cups chicken broth, low sodium1lb baby carrots1lb red potaotes1 large onion, chopped1cup frozen peas3 cloves garlic2tsp dried thymesalt, pepper
Directions
Mix flour, salt ant pepper in small bowl. Heat half oil in deep pot. Dredge veal through flour mixture and add to heated oil in pot. Brown veal and remove from pot. Heat remaining oil in pot and add onions and garlic. Cook until onions are tender and scrape bits up from pan. When cooked return veal to pot. Add chicken broth and bring to a boil. Reduce heat add carrots, thyme and potatoes to pot. Cover tightly with lid and simmer for approx 45 mins. Remove lid skim fat and add peas. Cook until peas heated through. Serve.
