Posole Blanco

Ingredients
1 Tbsp. olive oil1 1/2 cups chopped onion2 boneless chicken breast chopped into bite-size pieces3 cloves garlic, crushed1 Tbsp. dried oregano1 or 2 (30 oz. )cans hominy4 cups chicken stock1/2 tsp. salt2 limes, halved1 avacodo chopped
Directions
Heat the oil in a skillet. Add 1 1/2 cups of the onion, the pork (if using), chicken, and garlic. Cook until meat is browned, about 10 minutes. Combine the hominy, oregano, and chicken stock in slow cooker and stir. Cover and cook on low for 6 to 7 hours. One hour before serving, add the salt. Stir. When the soup is hot, dish into individual serving bowls, squeeze juice from half a lime into each bowl and add garnishes such as avocado, radishes, sour cream and cabbage.
