Cajan Spicy Shimp With Fettucini

Ingredients
*6 ozs. green fettucine noodles*1 TBS. + 1 tsp. of margerine or butter*2 cups of sliced mushrooms*2 TBS. of sliced scallions*1/2 cup of bottled clam juice*14 ozs. of peeled and deveined med. shimp*1/4 cup of sour cream*1/2 cup of of plain lowfat yogurt*seasoning mix (recipe below)*1 oz.of freshly ground paresan cheese
Directions
* In a large pot of boiling water cook fettucini 10-12 minutes or until 'Al Dente"
*Drain and keep warm.
*in a large non-stick skillet over med. heat, heat butter until bubbly.
*Add mushrooms and scallions, cook 4-5 minutes, tossing frequently just until mushrooms are tender.
*Add clam juice and bring to a boil, add the shimp and cook 3-4 minutes, again tossing frequently until pink and cooked through.
*Remove from heat, stir in yogurt, sour cream and seasoning mix.

SEASONING MIX

*1/4 tsp. salt
*1/4 tsp. paprika
*1/8 tsp. pepper
*1/8 tsp. each of thyme and oregano
*1/8 tsp. of onion powder Mix all ingedients of whole recipe together and chow down!!!
