Jennifer Cornbleet's Raw Cream of Zucchini Soup

Ingredients
½ cup water1 zucchini, chopped (about 1 cup)1 stalk celery, chopped1 tablespoon lemon juice1 teaspoon mellow white miso½ teaspoon crushed garlic (1 clove)¼ teaspoon sea saltdash cayenne pepper1 tablespoon olive oil½ avocado, chopped1 tablespoon fresh minced dill, or 1 tsp dried
Directions
Place all of the ingredients except the olive oil, avocado and dill in a blender. Blend until smooth.

Add the olive oil and avocado and blend until smooth. Add the dill and blend briefly just to mix.

Serve immediately.

    I added 1/3 cup of cashews, 1/4 of an apple and didn't put in any avocado - although the avocado would have made it creamy. Even my non Raw hubby liked this soup! Because the white miso is hard to get I used minute miso. Thanks for sharing. - 5/31/10
