Crusty Horseradish Chicken

8 oz boneless, skinless chicken4 Tbsp breadcrumbs1 Tbsp wheat germ1/8 tsp salt1/8 tsp black pepper1 Tbsp bottled horseradish1/2 Tbsp dijon mustard2 Tbsp white wine
Preheat oven to 400 degrees.
In a shallow bowl mix together breadcrumbs, wheat germ, salt and pepper; set aside. In another shallow bowl mix together horseradish, mustard and wine.
Dip the chicken in the horseradish mixture until it is well coated. Roll the chicken piece by piece in the breadcrumbs until evenly coated. Place the chicken in a baking pan coated with cooking spray.
Bake uncovered for 20 to 30 minutes or until done.

LIFELONGFATASS
This really wasn't as good as I was expecting. I like horseradish and it seemed like a nice adaptation of my dad's mustard breaded pork chop recipe. But it was *very* bland. The format isn't flawed, but the flavour really is.
Also, 4 Tbsp breadcrumbs is about twice as much as needed - 8/3/10
