Paula's Honey Dijon Chicken & Potato Skillet

Ingredients
3 boneless, skinless chicken breasts6 small red potatoes3 tbsp Extra Virgin Olive Oil4 tbsp balsamic vinegar3 tbsp honey3 tbsp Dijon Mustard1/2 tsp black pepper1/4 tsp salt1/4 tsp garlic powder2 tbsp corn starch1/2 cup cold water
Directions
1. Clean and dice potatoes
2. Brown chicken breasts in skillet
3. Mix all remaining ingredients EXCEPT corn starch & water in large bowl
4. Dredge each chicken breast through honey dijon mixture and place back into skillet
5. Place diced potatoes into dijon mixture, stir well to coat, pour potatoes & mixture over chicken breasts.
6. Cover & simmer for 30-45 minutes until potatoes are tender
7. Mix cornstarch and water well
8. Remove chicken breasts from skillet, stir cornstarch mix into potatoes, stirring until sauce has thickened a bit
