Savory Orange Salmon

Ingredients
2 Garlic Cloves Minced1 tsp fennel seed1 tsp Olive Oil4 Salmon Fillets 1" thick 4 oz each1/2 tsp salt1 Cup fresh squeezed orange juice
Directions
In a large non stick skillet, cook garlic and fennel seed in oil for two mintes. Sprinkle salmon with salt, add to skillet. Top with orange juice. Bring to a boil. Reduce the heat, cover and simmer for 8-12 mintes or until fish flakes easily with fork. Remove salmon and keep warm. Simmer sauce uncovered for 6-9 mintes or until slightly thickened.

Serves 4
1 serving equals; 1 salmon fillet with 4 tsp of sauce
