Baked Stuffed Chicken

Ingredients
1/2 Cup Feta Cheese2 TBSP. Fresh Basil1 Cup Fresh Spinach - Chopped2 Cups Fresh Broccoli - Chopped2 Cups Roma Tomatoes - diced1 TBSP Extra Virgin Olive Oil5 Boneless Skinless Chicken Breast3 Ounces Low Fat Mozzarella Cheese
Directions
Mix together olive oil, crushed garlic, chopped broccoli, spinach, basil, tomatoes and feta cheese. Pound chicken breasts very thin. Place a good amount of mix on top, center of chicken breast...sprinkle with salt & pepper. Roll chicken breast into log formation, hold together with toothpick. Sprinkle tops of chicken "logs" with mozzarella cheese and bake at 375 for 35 minutes or until fully cooked. Enjoy!! =)
