Almond & Fruit Vanilla Scented Granola

Ingredients
2 1/2 cups Quaker Oats Old-Fashioned Rolled Oats3/4 cup Raisins, (not packed) 3/4 cup Cranberries, dried, sweetened (craisins)1 cup Almonds, sliced 1/4 cup Brown sugar1/8 tsp Cinnamon, ground1/4 cup Vegetable Oil 1/4 cup Honey4 tsp Vanilla Extract
Directions
1) Preheat oven to 300°F. Lightly spray large baking sheet with nonstick spray.

2) Mix oats, almonds, raisins, cranberries, brown sugar, and cinnamon, in large bowl.

3) Combine oil and honey in small saucepan; bring to simmer over medium heat. Remove from heat; stir in vanilla.

4) Pour hot liquid over oat mixture; stir well. Using hands, toss mixture until thoroughly mixed.

5) Spread granola on prepared baking sheet. Bake for about 30 minutes until golden brown, stirring occassionally (suggested every 10 minutes).

6) Transfer sheet to rack and let granola cool completely. (If it is not cooled completely it will not clump - DO NOT SKIP THIS STEP!!)

7) Store in airtight container and ENJOY.

Makes 16 1/2 cup servings.

    I made a couple of changes because I wanted them to be more like bars. I added a few Tablespoons of Flax seed and 1/4 cup of peanut butter. Baked them in a 9 x 13 inch pan for the same amount of time and cut them into bars. They were awesome! - 7/22/12

    I prefer the loose granola and add them in my plain yogurt and even make it into a cereal. I added pecans as well. Good one for even just to snack on. - 3/26/17

    This is so delicious and simple, no changes necessary! That said, I think I will add peanut butter next time, just because I'm a PB addict. I might also experiment with lower fat options, but I will definitely keep track of this recipe as published! - 9/5/12

    Great recipe!! Used applesauce instead of the oil and added 3tbsp of Agave Nectar.

    However the nutrition information is way off with the servings at 16, this recipe makes about 6 cups not 16 and therefore the nutrition is understated.

    Servings: 16 1/2 cups not 16 cups! I get about 8 cups out of this recipie so that is what the servings are based on. It really depends on how much you break up the granola before measuring and eating it :)

    In less than an hour from start to finish I had this easy to make granola cooling on the rack. The taste is very good and I will definitely make it again. The only thing I will do different is add the fruit at the end after the baking so stays soft. - 10/21/10
