Ingredients
* Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) CHOPPED * Cucumber (with peel), 1 cucumber (8-1/4") HALVED AND SLICED * Onions, raw, 1 medium (2-1/2" dia) CHOPPED * Garlic, 2 tsp MINCED * Scallions/Green Onion 2 tbsp CHOPPED * mint, 3 tbsp CHOPPED * Lemon juice, 6 tbsp * *Extra Light Olive Oil, 2 tbsp * Fresh Ground Pepper to taste
Directions
Combine all ingredients in a container with a lid and shake to mix.
Or just stir it all up. Whichever you prefer.

Allow to chill in the fridge for at least 30 minutes before serving.
