PiriPiri Chicken Wings with Israeli Couscous

Ingredients
18 chicken wingsPepper, black, 1 tbsp Rosemary, dried 1 tbspBib Lettuce, 2 leaf, medium 2 large stalks of celery Couscous, Israeli Chicken stock, home-prepared, 2 cup piri piri sauce, 5 tbsp Allspice, 1 tsp Cinnamon, ground, 1 tbsp Parsley, dried, 3 tbsp Curry powder, 3 tbsp *Fennel seed, 1 tbsp *Cumin seed, 2 tbsp
Directions
Makes 3 servings of 6 wings + 1/3cup seasoned couscous.

Place your 18 split chicken wings into a wide diameter, oven proof SS casserole pan or 12 inch skillet ( I use cast iron ) with 2c of filtred water, all of the seasonings ( please crush both the fennel & cumin seeds ) and the finely diced celery. Bring to a boil on your stovetop for 5 min & reduce heat to simmer for 10 minutes further. ( This makes your chicken stock! )
Remove wing pieces, pierce with a fork all over and place in heat proof bowl & pour over the PeriPeri sauce.
Stir the Israeli Couscous thru the excellent chicken stock You just made! Bring up to medium heat for 5 min. Remove from stovetop, place marinated wing pieces on top of your seasoned Israeli couscous & pop into a hot ( 450deg F ) oven for the final 10 minutes.
