Diabetic Friendly Fish Curry

2 Tbs. Olive Oil4 C. Fresh Turnip Greens, Chopped1 tsp. Ground Ginger1 Tbs. Yellow Curry Powder1 Tbs. Chili Powder1 - 10 oz. can ROTEL Original Diced Tomatoes with Chilies (Spicy) but you can also use the mild version.2 fillets fish of your choice (I used Red Snapper) cut into small pieces (approx. 1 inch)Dash Ground Red Pepper (Cayenne) to taste - optional
Heat Oil in a skillet and stir fry whatever vegetables you are using for about 30 - 40 seconds. If using the turnip greens or other leafy greens, reserve 2 cups for later.
Add spices and mix thoroughly in skillet with greens.
With heat on Medium High, add fish and stir fry until well mixed.
Add 10 oz. can of ROTEL Diced Tomatoes and Chilis and mix well.
Add remaining turnip greens and cover with lid.
Turn heat to Low and simmer for about 7 minutes or until fish is tender and heated through.
Mix well before serving.
