Peanut Butter and Coconut Chicken and Noodles

Ingredients
2.5 pounds chicken2 packs of ramen noodles (without flavor packet)3/4 cup peanut butter3/4 cup coconut milk1/4 cup lime juice1/4 cup cilantro1 tablespoon sugar3/4 teaspoon salt1/4 teaspoon cayenne pepper6 scallions, sliced thin1 cucumber, cut into quarter-inch pieces
Directions
-Cut chicken into bite-sized pieces and cook on medium heat until done.
-Chop up scallions and cucumber.
-Prepare ramen noodles according to package directions. Discard flavor packet.
-Once chicken and noodles are cooked, combine all ingredients in large bowl.

Serve room temperature or cold. Makes 8-10 servings.

(The nutritional info will indicate a LOT more sodium than there really is, because it includes the ramen flavor packets. Disregard the sodium.)
