Sausage Casserole

Ingredients
* 3 cups shredded potatoes (hash browns) * 3 tbsp butter, melted * 1 pound reduced fat sage flavored breakfast sausage * 6 ounces mild Cheddar cheese, shredded * 3 ounces Monterey Jack cheese, shredded * 1 small onion, shredded * 1 cup spinach, finely chopped * 1 (16 ounce) container small curd low fat cottage cheese * 6 large eggs * A dash of salt and pepper.
Directions
1. Preheat oven to 375 degrees F
2. Cook sausage over medium-high heat until evenly
browned. Reduce heat and add onion. Cook until
onion is translucent. After contents of pan have cooled
remove and place on paper towels to absorb excess
grease.
3. Put hash browns in two 8x8 baking dishes and allow
them to defrost slightly. Dab with paper towels to
remove any excess moisture. Melt butter in
microwave.
Pour melted butter over defrosted potatoes and stir to
mix.
4. In a large bowl slightly beat eggs to mix, whisk in
cottage cheese, whisk in Cheddar and Monterey Jack,
blend in cooled sausage and onion mixture and finely
chopped spinach. Season with salt and pepper.
5. Pour 1/2 of mixture over each 8x8 baking dish
containing hash brown mixture. Flatten with a wooden
spoon to even.
6. Bake at 375 degrees for 45-50 minutes or until golden
brown and slightly firm to the touch.
