1 lb boneless chick breasts - cubed1 can (14.5 oz) Italian diced tomatoes (I buy low sodium version)6 medium carrots, chopped4 celery ribs chopped1 large Onion, chopped1 medium green pepper, chopped1 1/2 c sliced mushrooms 2 low sodium chicken boullion cubes/packets2 tsp Splenda1 tsp chili powder1/4 tsp pepper1 tbs cornstarch2 c cold water
add all ingredients except water and cornstarch to crock pot. combine water and cornstarch, por over other ingredients.
Cook on low from 8-10 hours.
