"Fried" Sweet Potato

Ingredients
1 medium sweet potato1 tsp. margarine1 tsp. vegetable oil1/4 tsp. salt
Directions
On baking sheet bake sweet potato at 400 degrees until just tender, 35-40 min; let sweet potato cool, then peel and discard skin. Cut potato into sticks; In 9-in skillet combine margarine and oil and heat until margarine is bubbly and hot; add sticks and cook over medium heat, turning frequently, until crispy outside and tender inside. Immediately sprinkle with salt and serve
