Banana Zuchinni Muffins

1/4 cup whey protein1/4 cup light rye flour1/2 cup all-purpose flour1 1/2 teaspoon baking powder1 1/2 teaspoon baking soda2 teaspoon cinnamon1/4 teaspoon ground allspice1/4 teaspoon ground nutmeg1 teaspoon salt1 egg3 egg whites1/4 cup oil1/2 cup unsweetened applesauce2 medium bananas, mashed1 teaspoon vanilla extract2 cup shredded zucchini1/2 cup pecans
Preheat oven to 350 degress.
In a large bowl, whisk together whey protein, rye flour, white flour, wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg and salt.
In a separate bowl, beat eggs.
In another bowl, add sugar, oil, applesauce, and mashed banana. Add to eggs and mix well.
Fold in zucchini and pecans.
Pour into muffin cups and bake for about 20 minutes.
Note: you can also put batter in 2 greased 9x5-inch loaf pans; bake for 45-50 minutes or until knife comes out clean.
