Carrot Cake Muffins

2 T vegetable oil1/4 C crushed pineapple1/4 C molasses1/4 C honey or agave syrup3 egg whites3 carrots, grated1/2 C oatmeal1 C whole wheat flour1 tsp baking powder1 tsp baking soda1 tsp cinnamon1/2 tsp cloves or all spice
Combine oil, pineapple, and sweeteners.Beat in egg whites. Stir in carrots. Add dry ingredients, mix well. Add nuts and raisins now, if desired.
Place a muffin paper in each space of 12 standard muffin tins. Fill each evenly, aproximately 1/4 cup each.
Bake at 375 degrees for 20 minutes.
