Ingredients
Safflower Oil, 1 TBSPCarrots, Chopped, 10 oz/2 Cups/6 WholeOnion, Chopped, 3.5 oz/1 Cup/.5 WholeGarlic, Chopped, 2 Whole ClovesVegetable Broth, Trader Joe's Organic, 2 BoxesTomato Paste, 33 Grams/2 TBSPCabbage, Shredded, 6 oz/3 Cups/.5 Small HeadGreen Beans, Trimmed, Cut into Bite-Size Pieces, 2 oz/.5 CupBroccoli, Chopped, 6 oz/3 CupsSaltPepperBasil, DriedOregano, Dried
Directions
Heat oil in stock pot over med-high heat. Add carrots, onion, and garlic. Sautee five minutes. Add broth and tomato paste. Stir until blended. Add remaining vegetables and seasonings/herbs to taste (about 1/2 TBSP each). Bring to boil, reduce heat and simmer uncovered for 30 minutes or until veggies are at desired consistency and flavors are blended. Makes 10 cup, one-cup servings.
