1 lb dry small red beans, presoaked2 tbsp chili powder2 tbsp garlic, chopped2 cups carrots, sliced/diced2 cups diced celery2 cups chopped onion2 cups sliced mushrooms2 roasted sweet peppers, dicedtap water1 tbsp Bragg's Liquid Aminos
Heat up olive oil in soup stock pan. Add onions, celery, garlic and mushrooms - saute, cover with lid and let onions sweat for about 10-15 minutes. Add rest of ingredients and 4 cups of water. Let simmer for at least an hour. I basically let this cook for a couple hours to develop flavors. Keep adding water as needed. Makes 16 cups. Serving size is 2 cups.
