Sunny's Simple Lentil Soup

1/2 Medium Yellow Onion1 Clove Garlic1 tsp Olive Oil1 Large Carrot1 Celery Stalk1 Can Diced Tomatoes2 Cups Chicken or Vegetable Broth (Reduced Sodium)1/2 Cup Dry Green Lentils (or any color really)1/4 tsp Thyme1/4 tsp BasilBlack Pepper to taste
Dry Lentils should be rinsed first.
Heat oil in the bottom of your pot and saute the diced onion and garlic for about 3 minutes or until soft.
Add sliced Carrot and Celery and saute for a few minutes then add remaining ingredients.
Bring soup to a boil then simmer on low for about 30 minutes or until lentils are tender.
**Sodium can be reduced by using "No Salt Added" Canned Diced Tomatoes
Makes 4 smaller servings (about 1 cup) of about 140 calories or 2 larger dinner sized servings (about 2 cups) of about 280 calories.
