Chicken Pozole

Ingredients
white hominyboneless, skinless chicken thighscabbageoniongarlicjalapenochicken brothenchilada sauce juice from 1 lemon
Directions
BBQ chicken, cut into bite size pieces and reserve.
In large pot bring enchilada sauce, chicken broth, onion, garlic and jalapeno to boil. Reduce heat simmer uncovered for 15 mins. Add chopped cabbage simmer for 15 mins. Add chicken and hominy simmer for 5 mins. Stir in juice of 1 lemon right before serving
