Asian Style Chicken and Noodles

Ingredients
8 ounces chicken breast, no skin, no bone, R-T-C 1 teaspoon dark sesame oil -- divided 1 cup green onion -- sliced 3 cups coleslaw mix 8 ounces Shiritake Noodles- rinsed and cut in half 1 can chicken broth 1 Tablespoon soy sauce, low sodium
Directions
Trim visible fat fat from chicken and dice into 1/4" pieces. Heat 1/2 tsp oil in a large nonstick skillet over medium high heat. Add chicken and green onions; stir fry 1 minute. Remove chicken mixture from skillet; keep warm. Heat remaining 1/2 teaspoon oil in skillet over medium high heat. Add cole slaw; stir fry 30 seconds. Stir in chicken mixture, Shiritake noodles, slaw, and soy sauce; cook until thoroughly heated.
Makes (4) 1.5 cup servings
