Vegetarian Lazymans Cabbage Rolls

8oz of Lite soy crumbles (Gimmel Lean)2 med. Onions1Tbsp Safflower oil1 sm head cabbage chopped2 15 oz cans of diced tomatos1 c white rice (you can substitue brown rice if you would like)2 c low sodium vegetable broth
In a non-stick skillet break up and brown soy crumbles onions and garlic in oil until onions are transluscent. Transfer to 9x13 baking dish, mix in remaining ingredients. Bake in a 350 degree oven for at least 30 minutes or until rice is tender.
Serve hot.
