Extra Virgin Olive Oil, 2 tbsp Onions, raw, 1 medium Carrots, raw, 1 small Celery, raw, 1 stalk, medium (Parsley, 2 tbsp Garlic, 2 cloves Canned Tomatoes, 1 medium Beans, great northern, 2 cup Green Beans , 1 cupLima Beans, 1 cup *Spinach, cooked, 2 cup *Macaroni, enriched, 2 cup elbow shaped 2 cups chicken stock
2Tbsp olive oil in heavy saucepan over medium heat. Add carrot, onion, celery, parsley; cook about 10 min. Add garlic and tomatoes (crushed through your fingers), boil, stirring until thickened. Stir in all beans and spinach. Add 2 cups chicken stock simmer for 5 minutes. Add macaroni and cook until tender. Season with salt and pepper to taste. Top with grated parmesan cheese.
