White Chicken Chili

1 pound dried navy beans5 cups chicken stock2 TBS olive oil1 TBS garlic3/4 C diced onion1.5 C chopped green Chiles (fresh or canned)1.5 pound boneless, skinless Chicken breast, finely chopped1 TBS Cummin1TBS Oregano1-2 tsp ground black pepper1/2 tsp white pepperPinch red pepper flakes1/2 bunch cilantro flakes, chopped
Makes 10-15 servings
Rinse beans well, cover with cool water and soak for 2 hours. Drain. Place beans in large pot with Chicken stock & brind to boil over high heat. In saucepan, heat oil over medium heat. Add garlic, onion, and chiles and saute for 6 minutes. Add chile muxture to pot with beans. Add chicken, cumnin, oregano, pepper, white pepper, red pepper flakes, and cilantro. Lower heat to medium and cook, stirring occasionally for approximately 1.5 hours. Serve with cornbread.
