I cup diced roast chicken breast, skin removed1 cup diced celery1 cup diced apple1 Tbsp Spectrum Lite Canola Mayo2 Tbsp Nonfat plain yogurt1 bunch fresh cilantrolemon juice and fresh ground black pepper to taste1/4 tsp curry powder Rice Cakes
Dice chicken , celery, apple, combine in bowl with curry powder, mayo and yogurt. Chop fresh cilantro and fold into chicken mixture. Add lemon juice and black pepper to taste.
Spoon salad onto Rice Cakes.
